Tasting notes

Bright, fairly liquid appearance, pale gold in color with lemon-yellow highlights.

The nose evokes empyreumatic aromas with notes of woody vanilla, cocoa, and roasted hazelnuts, and a smoky accent.

Fresh, characterful palate, offering a creamy, melted effervescence. Time spent in the wood brings out the fruit whilst still maintaining its mineral freshness and vinosity.

Food pairing with champagne

A powerful, vinous champagne with which lovers of structured wines can explore bold
culinary choices such as grilled scallops, mimolette crumble, creamy curried risotto, partridge with girolle mushrooms, or a veal blanquette with mushrooms.
