Tasting notes

Bright, liquid appearance, intense pale yellow-green color with bright yellow highlights.

Clean, fresh and reminiscent of the sea, with notes of chalk and iodine, acacia flowers and lemon.

It is fresh and frank on the palate, going on to develop a lemony acidity.

Food pairing with champagne

This champagne is very well suited to being served as an aperitif, its briny signature suggesting dishes that have a hint of salty sea air: raw salmon with drops of yuzu-flavored olive oil, or perhaps green asparagus with crayfish tails, mixed pickles or a ripe Brillat-Savarin.
